Healthy Hummus:
Another OKS&F Favorite Snack

Hummus is loaded with nutrients that can contribute to a healthy lifestyle. Include this delicious recipe in your diet by using it as spread on sandwiches and wraps, as dressing to your salad or pasta, as dip for raw vegetables, or as side dish for main courses!

To kick up the flavor, you can add a small amount of lemon zest, or even add nut butter to provide even more creaminess. Enjoy!


Ingredients

- 19 ounce can chickpeas, drained and rinsed
- 4 cloves of garlic, minced
- 1/4 cup plain low-fat yogurt
- 1 tablespoon lemon juice
- 1 teaspoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon paprika
- 1/8 teaspoon pepper
- 1 tablespoon fresh parsley, chopped

Preparation

In a blender, combine everything and process until smooth. If you need more liquid for consistency, add a bit more plain yogurt. Chill and serve as a vegetable dip or serve with pitas.
