Nutty Perfection: Do-It-Yourself Energy Bars

Get stirring and reap the benefits of these tremendous power-packed, energy-giving, do-it-yourself bars!

These are our favorite grab-and-go energy bar, sure to fill your stomach with all-natural ingredients and provide lasting energy.


Ingredients

- 1 tablespoon virgin coconut oil, melted
- 1 cup honey
- 1/2 teaspoon fine sea salt
- 1 1/2 cups tahini
- 1 teaspoon vanilla
- 1/2 cup raw almonds, coarsely chopped
- 1/2 cup roasted salted cashews, coarsely chopped
- 1/2 cup pitted dates, chopped
- 1 cup unsweetened coconut
- 2 cups rolled oats
- 1/2 cup pumpkin seeds
- 1/2 cup sesame seeds
- 2 tablespoons ground flax seeds
- 1 tablespoon chia seeds

plus: - 1 teaspoon olive oil

 

Preparation

Preheat oven to 350° F. Grease a rectangle baking sheet and a 1/2-cup and 1-cup measuring cups with the olive oil (doing this prevents the honey and tahini from sticking.)

Stir the coconut oil, honey, sea salt, tahini, and vanilla in a large bowl. Add the almonds, cashews, dates, coconut, oats, as well as the pumpkin seeds, sesame seeds, ground flax seeds, and chia seeds. Combine thoroughly. 

Spread the mixture approximately one-inch-high on the greased baking sheet, and cut into bars (be sure to pat the larger stray pieces from cutting back onto the bars.)

Bake until the edges are golden brown, approximately 20 minutes. Be sure to set a timer so the bars do not over bake!  

Once baked, let the bars cool completely. Store the bars in an airtight container for four days or in the freezer for up to three months. Since the bars stay soft and sticky, it helps tremendously to freeze them first, then wrap individually in plastic wrap.
